Do we all have that one comfort food we fall back on? The one that awakens our taste buds and fills us with that warm, happy feeling? Or for people like myself, there’s multiple foods that transport us to this happy place.
For me, pancakes would have to be one of the foods to make this list. The soft, fluffy texture combined with the melty, sweet syrup are hard to beat when it comes to needing a comfort bite. They’ve been a longtime favorite for me. Growing up they were a weekend treat, and I’ve continued to enjoy them at home and around the world.

Perhaps my most memorable experiences with this comfort food was from my honeymoon in the Caribbean. Who doesn’t love a well-plated stack of pancakes while sitting on a warm beach overlooking the ocean? But the most pleasant surprise from these was the signature cinnamon flavor. I don’t recall having a cinnamon pancake before this trip, and I must say it impressed.


Now, I not only enjoy a sprinkle of cinnamon in my pancake batter, but I’ve also found a way to elevate the taste even more with caramel chips. I will tell you, cinnamon and caramel are a fabulous pair, and if you’ve never tried them together you’re missing out.


There’s no fancy recipe, it’s simple but surprisingly delicious. Just you’re favorite pancake mix and a sprinkle of cinnamon and caramel chips in the batter. Feel free to go the extra mile and make your favorite homemade batter, but I often just enjoy the simplicity of a quick, delicious treat on a relaxing weekend morning.

- A sprinkle of cinnamon
- A handful of caramel chips
Directions
- Mix up your pancake batter as directed.
- Mix in as much cinnamon and caramel chips to your liking.
- Cook on a skillet with butter until golden.
